Saturday Biscuit Recipe

SATURDAY MORNING BISCUIT RECIPE

If you have kids, the one recipe you need on a Saturday morning is a good homemade biscuit recipe. Saturday mornings feel special and lazy, unless youth soccer is involved, in which case you are out the door with your hair sideways by 7:30am. This is not your recipe for those mornings, although I defend this recipe as one that is (1) “do-able” and quite delicious, (2) worth your time, (3) better than store bought, and (4) will be loved by the whole family.

The following receipe makes about 10 biscuits, depending on how big you cut your biscuits, but I ALWAYS double the recipe to freeze some for those Saturday morning soccer days.

And, to give credit where credit is due, this receipe is from A Pinch of Yum, one of my favorite sites for receipes. I made one slight change, but otherwise, she gets the credit for an amazing biscuit.

THE RECIPE

Ingredients

2 cups flour

1 T baking powder

1 T sugar (I use coconut sugar, because that’s what we put in our coffee - you do you)

1/2 t salt

6 T very cold butter, grated (don’t skip this, grating goes by quick with butter)

3/4 cup buttermilk (milk is fine, buttermilk is exceptionally better)

Directions

Preheat oven to 425 and line your baking sheet with parchment.

Mix dry ingredients together. Add the grated butter and work it in with your hands. Add buttermilk and mix together. Turn dough onto counter and knead a few times. Using a rolling pin, roll to a 1-2 inch thich layer and cut biscuits with a drinking glass (I use a mason jar).

Cook for 15-17 minutes, but don’t burn them. This goes without saying really, but keep an eye on them the first time you make them so you get the time just right for your oven!

EXTRAS?

You may have a few leftover, in which case, they freeze beautifully (warm for 10 minutes on 350)! And, I think these would make a great “happy” for a family. Wrap up a few warm (or frozen!) biscuits with jar of local honey, enclose a set of recipe cards :), tie with a bow and you have a thoughtful gift for a busy family.
